Kaiseki Ryori is traditional Japanese multi-course haute cuisine, mainly serve in Ryokan. Its origins are found many centuries ago in the simple meals served at the tea ceremony, but later it evolved into an elaborate dining style popular among aristocratic circles. Today, kaiseki is served in specialized qualitied restaurants can be enjoyed by staying at a Ryokan, of course, in Bessho Onsen Ryokan serve authentic local ingredient to use.

Kaiseki meals have a prescribed order to their dishes, most of which are prepared by utilizing one of the common techniques of Japanese cooking. However, kaiseki chefs have considerable freedom to add, omit or substitute courses in order to highlight regional and seasonal delicacies and personal style. Below is a list of courses as they typically appear in a kaiseki meal:

SANADA-MARU
Local original chicken in Ueda designated  from Sanada Yukimura who is one of the famous Samurai in this area. Breeded longer time compare to normal chicken has chewey and deep taste.
Shinsu Samlon
Mixed a rainbow trout and brown trout. This thickeyand finer river fish have a delicious especially for Sashimi. 
Matsutake Mushroom
Very valuable andd expensive mushroom has brilliant smells and taste called 'King of Autumn food'. Only served within October. 
Shioda-Rice
Great nature, water, environment  exist in this Shioda area produces qualitied rice. 
This not only use for boiled rice, also for Sake or other drinks.
Miso
As famous in Japan, Nagano is the highest amount of production rate area for Miso so that Miso soup or other a lot of miso taste food are made.
Local vegetables & Fruites
Fertile soil land in this area produce many kinds of vegetables has delicious taste.  Thats also depeinding on the season to get a lot different kind of vegs & fruites are eatable.
Although we do not have seafood, there is enough a lot of great meet, vegetables, grains, fruites   so on produce under the fertile soil land and great nature in Nagano and our area. Used those ingredient, Ryokan and other restaurant serve great tasty food.

Shinsh Beef
The cow grew with apple makes beef taste sweet and tasty.
Lots of amino acid contains and helty fat part includes in this beef.

If you want to have a lunch or dinner when stays Ryokan without meal, reccomend to go to local restaurant.
Normally can order alacarte. There is not only main dish (soba, udon, ramen, donburi (Rice-bowel), Japanese curry so on), also many side-dish that suitable with drinks (Yakitori, fish-cake, salad, Tofu so on) 
In Bessho onse, horse-meet Udon, boiled bee-kids, Oidare-Yakitori (Yakitori with Special garic taste source) are traditional food to try! Also freiendly service in local will be your great communication experience.
